People keep wanting me to demonize the city government for them. A typical question about my progress is: “Why is it taking so long, is the city giving you a hard time, making you get permits?”

It is taking so long because I am building a restaurant from scratch, by hand, by myself. I think I am making pretty good time considering.

The city, so far, has been 100% honest , upfront and supportive of my plans.

Imagine if you didn’t need permits to build a restaurant. The alternative to proper sanitation is cholera and typhoid.  You should thank heaven for permits. Some people cant even run a coffee cart without getting a C from the health department.
